Food we ate today from Pampered Chef: Cheesy Tex-Mex roll-ups, Jalapeno Popper Pizzas, Grilled Chicken Penna Al Fesco....and Chocolate Banana Cream Trifle!!
And it was SO GOOD, that I came home and made the roll-ups for the family!! This is toooo awesome not to share, so here's the recipe!
2 ears of corn, husked
1 small red bell pepper finely diced
- or red AND green pepper like I did
1/4 cup lightly packed fresh cilantro (this MAKES this recipe!!)
3/4 lbs 90% lean ground beef
1/4 tsp salt
1 1/2 cups Mexican blend shredded cheese
6 (11 in.) flour tortillas
Preheat oven to 450*. Remove corn from cobs. Dice bell peppers. Chop cilantro. Brown ground beef and salt, until no longer pink. Add corn and peppers for an additional 1-2 minutes. Remove from heat, drain, and add to mixing bowl. Stir in cheese and cilantro.
Spoon meat mixture down the center of tortilla, roll up tightly, folding in sides. Place rolled tortillas on a baking sheet or stone, and spray with vegetable oil. Bake 10-12 mins or until roll-ups are lightly browned and crisp.
Cut each roll-up on a bias into four slices. Serve with guacamole or salsa!! Enjoy!!!

Love your magic card. My kids have a book like that, but I never thought to make a card that way! That recipe looks yummy too. Love me some Mexican food!
