Creamy One-Pot Chicken Pasta

2 large boneless, skinless chicken breasts
1 48 oz carton of FF chicken broth (Swanson's)
seasonings (I used Tastefully Simple's onion, and garlic)
1 lb. mini penne pasta
3 cups fresh broccoli florets
1/4 cup matchstick carrots
4 wedges Laughing Cow light, garlic herb


Dice chicken breasts and stir fry in a large pot with a quick spray of olive oil Pam. When completely cooked, add chicken broth and seasonings. Bring to a boil and add pasta. Cook 8-10 minutes until pasta is almost cooked but still firm. Stir in vegetables and cut up cheese wedges. Reduce heat to medium and cover. Cook an additional 2-4 minutes or until vegetables are tender. Serves 6.

That looks and sounds delish! Do you know how many carbs are in it? Every since having gestational diabetes, I pay a LOT more attention to carb values! Somebody needs to make a recipe book for GD moms with delish meals that are under 45g of carbs!!
