The card I was working on happened to be a get well card, and of course they scooped that baby up and carried it off with them when they left!! I don't have an essential element needed to make any more, but it's on order and will hopefully arrive this week. So....when it comes in, I will make another fabulous card just like it, and take a photo this time and post it!!!
So with no crafting photos to share with you, here is what I made for dinner:
I have no clue what to call it, except yummy!!
I know you will want the recipe, although there really isn't one, lol! I just sort of "winged it". But here's what I did.
In the crockpot I put in:
2 lbs (-ish, about 5 med, boneless skinless chicken breasts) cubed
1 - 20oz can of pineapple chunks in juice
1/4 cup brown sugar (I used light brown)
1/3 cup soy sauce
generous sprinkling of minced onions, paprika and crushed red pepper.
Stirred it up, and left it on high for 6 hours.
When it was done I scooped out the chicken and pineapple, straining off the juice. I made rice, and then stir fried fresh snow peas and fresh mushrooms with a bit of olive oil, and when they were done, added the chicken and pineapple to the mix. Put on top of rice and enjoy!

I know what you mean about winging it when it comes to cooking. I'm the queen of wing! I can't wait to see the card. I also can't wait for the new Catalogue!!!
