Great Tip Tuesday

At Jeannie's house Tuesday night, we had a Pampered Chef party....

Cheesy Chicken Chilaquiles
1 1/2 lbs. boneless, skinless chicken breasts
1 Tbsp Pampered Chef Southwest seasoning
1 3/4 cups salsa verde
1 cup chicken broth
3/4 cup chopped fresh cilantro
12 cups restaurant style tortilla chips
2 cups shredded mozzerella
1 cup Mexican blend shredded cheeses
sliced black olives (optional)
sour cream (optional)

Cut up chicken into one inch pieces and put on a single layer inside of covered baker. Sprinkle with SW seasoning and microwave about 5 minutes, until no longer pink. Drain and set aside.

In a bowl stir together salsa and broth. Chop cilantro. Arrange half the tortilla chips over the bottom of the baker, breaking chips (smoosh 'em down!). Top with half the chicken, salsa mixture and cheeses. Sprinkle with cilantro. Repeat layers.

Microwave covered on hight 5-7 minutes or until cheeses melt and most of liquid is absorbed. Let stand, covered, 5 minutes. Sprinkle with remaining cilantro and serve with sour cream. Try not to inhale it too quickly because it's sooooooo yummy!

Pumpkin Trifle
Cut up, unfrosted spice cake
2 1/2 cups cold milk
1 (15 oz) can of solid pack pumpkin
4 packages (3.4 oz) instant vanilla pudding
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground allspice
2 cups heavy whipping cream
maraschino cherries (optional)

Divide cake into four portions; cover bottom of trifle bowl with first portion. In a large mixing bowl, combine milk, pumpkin, pudding mixes and spices; beat until smooth. Spoon half into trifle bowl. Spread second portion of cake pieces on top. In a small mixing bowl, beat cream until stiff peaks form; spoon hlaf into bowl. Sprinkle with third portion of cake pieces.

Top with remaining pumpkin mixture, then remaining cake pieces and whipping cream. Garnish with cherries if desired. Cover and chill at least 2 hours before serving. Or just devour it - that's good too, lol!

First, how good was the trifle?
Second, you know that deep dish oven chicken roasting pan (nice how I don't know the exact name of it but I think it was in the first picture). What is the benefit to that over a roasting oven?

oh my, this cheesy chicken dish looks soooooooooooooo yummy!!!

I'm not a fan of pumpkin, so I'm going to pass on that for now :(

The chicken dish looks so yummy. Might need to try it.

Also did I tell you I made the chicken and bbq sauce on a french bread loaf? It was delish and my husband said it was a keeper!!:)
